A typical eighth of beef weighs approximately 75–100 lb hanging weight and provides roughly 45–60 lb of packaged beef.

Our price is $6.50 per pound hanging weight, with processing included. Hanging weight is the weight of the beef on the butcher’s hook before it is cut, trimmed and packaged.

A typical eighth may include:

  • 1–3 T-bone or porterhouse steaks

  • 1–3 rib steaks

  • 1–3 sirloin steaks

  • 1–3 round steaks

  • 1–2 chuck roasts

  • 1 arm, rump or sirloin-tip roast

  • Short ribs and/or soup bones, when available

  • Approximately 20–30+ lb of ground beef

A typical eighth costs approximately $490–$650 total.

Because each steer is different, hanging weight, packaged weight and the exact assortment of cuts will vary. Dividing a beef into eight balanced portions also means the packages cannot be identical: one eighth may receive more sirloin while another receives more round steak or a different roast. We work to make every portion as fair and comparable in value as possible.

Plan for approximately 1½–2 cubic feet of freezer space. An eighth will generally fit in a large 48–60 quart cooler, although bringing an extra insulated bag or cooler is always a good idea.

Deposit, balance and pickup

Your deposit reserves your beef and is applied directly to the total purchase price—it is not an additional fee.

After your order is placed, we’ll contact you to confirm the next available butcher date and expected pickup timeframe. Once the butcher provides the actual hanging weight, we’ll calculate your final total and deduct your deposit. The remaining balance is due before pickup or delivery.

We have beef processed regularly throughout the year and will work with you to find a timeframe that fits your schedule.

Local pickup and metro-area drop options are available. Our usual metro meeting points are Rogers and Blaine, but we regularly coordinate pickups in other areas as well.
